pineapple salsa

fresh, easy & so delicious. we put it in on shrimp tacos with cabbage & a ton of avocado. it's one of those things you can't really screw up when you're working with a handful of simple ingredients.

pineapple salsa
(makes about 2 cups)

1 cup pineapple, diced
1 cup tomatoes, diced
2 tbs. red onion, minced
1 jalapeno, minced (optional)
2 tbs. cilantro, minced
juice of one lime
salt & pepper, to taste

that's it! combine all of the ingredients and it's ready. it tastes better after a couple hours in the fridge, when the lime juice has really soaked in. i also cut up avocado and add it in, but only right before i'm about to eat it so the avocado doesn't brown.
