basic crepes.

alright, alright, we caved! we gave up our non-dairy streak & made these crepes. the weather's been rainy for weeks now, & i think life without sunshine and ice cream was a little too bleak for both of us. and it's still rain clouds and suns dripping rain as far as the eye can see (says my weather app). so, we've been crepe-ing it up over here. i haven't made any savory crepes yet-- if you know a good recipe, let me know! we've just been filling ours with strawberries, powdered sugar, peanut butter, chocolate, and raspberry sauce (frozen raspberries heated up with sugar and pureed into a sauce). oh, and ice cream. of course.

basic crepes
(makes 6-10)

1 cup flour
1/4 tsp. salt
1 tbs. sugar
1/2 cup milk
2/3 cup water
1/4 cup butter, melted
1 tsp. vanilla

1. whisk together the first three ingredients, then add the remaining ingredients and whisk until smooth. refrigerate batter for 30 minutes.
2. heat a large non-stick pan over medium-high heat. spray with cooking spray if you have it (i don't, and mine don't stick, but it'd probably be helpful).
3. pour 1/4 cup batter into the pan and rotate pan with wrist until batter forms a large circle. cook until bubbles begin to form, then flip with a spatula and cook the other side for 30 seconds.
4. remove from heat onto cooling rack or wax paper. don't attempt stacking them until they are cool! since i don't have a cooling rack, i place mine on wax paper and flip them after a couple minutes so they don't get stuck to the paper. repeat until all of the batter is used and enjoy!

It's okay, you can just go KINDA vegan, like Carrie. You gotta call her if you haven't talked to her recently and discuss... SHANE is practically a vegetarian!! You'd be amazed. :) Loves!
