frozen key lime pie.


frozen key lime pie
(adapted from ina garten)

for the crust:
10 graham crackers, crushed
1/4 cup sugar
6 tbs. butter, melted

for the filling:
6 egg yolks, at room temp.
1/4 cup sugar
1 (14 oz.) can sweetened condensed milk
2 tbs. lime zest
the juice of 4 limes
1 cup heavy whipping cream
1/3 cup powdered sugar
1/2 tsp. vanilla

1. preheat oven to 350 degrees.
2. combine the graham cracker crumbs, sugar, and butter in a bowl.pPress into a 9" pie pan. bake for 10 minutes until firm and golden. allow to cool completely.
3. beat the egg yolks and sugar together for 5 minutes, until thick. add the condensed milk, lime zest, and lime juice. pour into the baked pie shell and freeze.
4. when ready serve, beat the cream with the powdered sugar & vanilla until stiff peaks form.
5. cut pie & serve with a generous dollop of whipped cream on top.
